  • 1 1/2 c. corn oil
  • 1 3/4 c. sugar
  • 3 eggs
  • 2 c. all-purpose flour
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 2 1/2 tsp. cinnamon
  • 1 1/2 tsp. vanilla extract
  • 2 c. peeled and grated carrots
  • 1 c. walnuts, chopped
  • 1/2 c. flaked coconut
  • 1 (8 oz.) can crushed pineapple, well drained

Directions

    Mix oil, sugar and eggs; beat well.

    In separate bowl, sift flour, soda, salt and cinnamon.

    Beat both bowls together.

    Pour in vanilla, mixing well.

    Add carrots, nuts, pineapple and coconut; mix until well blended.
