- 2 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 c. sugar
- 3 medium eggs
- 1 1/3 c. carrots, grated
- 2/3 c. crushed pineapple, drained
- 2/3 c. pecans, chopped fine
- 1 1/3 c. salad oil
Directions

1Mix together flour, baking soda, cinnamon, salt and sugar. Mix until cinnamon is well blended.

2Add eggs, salad oil, carrots, pineapple and pecans.

3Mix on medium speed until batter is smooth and silky.

4Pour batter into two 9-inch layer pans that have been lined with wax paper.

5Bake in a 350° oven for 40 minutes.

6Cool, then ice.
