- 2 c. sugar
- 2 c. sifted flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 tsp. nutmeg
- 1/2 tsp. allspice
- 1 1/2 c. salad oil
- 4 eggs, separated
- 2 plus c. shredded carrots
Directions

1Sift dry ingredients in large bowl.

2Add oil, egg yolks and carrots.

3Mix well.

4Beat egg whites until stiff.

5Fold into first mixture.

6Pour into greased tube pan or spider pan.

7Bake at 325° for 1 1/2 to 1 3/4 hours in a tube pan or bake for 1 1/4 to 1 1/2 hours in spider pan.

8Add glaze to cake while it is hot.
