- 3 c. grated carrots
- 2 c. all-purpose flour
- 2 c. sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 4 eggs, well beaten
- 1-1/4 c. vegetable oil
- 1 tsp. vanilla extract
- Cream Cheese Frosting (see below)
Directions

1Combine carrots, flour, sugar, baking soda, baking powder, salt.

2stir in eggs, oil, and vanilla extract, mixing well.

3Spoon batter into 3 greased and floured 9-inch round cake pans.

4Bake at 350° for 30 minutes or until a wooden pick inserted in center of cake comes out clean.

5Spread Cream Cheese Frosting between layers and on top of cake while still warm.
