  • 3 c. grated carrots
  • 2 c. all-purpose flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. ground cinnamon
  • 4 eggs, well beaten
  • 1-1/4 c. vegetable oil
  • 1 tsp. vanilla extract
  • Cream Cheese Frosting (see below)

Directions

    Combine carrots, flour, sugar, baking soda, baking powder, salt.

    stir in eggs, oil, and vanilla extract, mixing well.

    Spoon batter into 3 greased and floured 9-inch round cake pans.

    Bake at 350° for 30 minutes or until a wooden pick inserted in center of cake comes out clean.

    Spread Cream Cheese Frosting between layers and on top of cake while still warm.
