- 2 c. grated carrots
- 4 eggs
- 1 1/2 c. vegetable oil
- 2 c. flour
- 2 c. sugar
- 2 tsp. cinnamon
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 tsp. vanilla
- 1 c. crushed pineapple (small can)
Directions

1Beat eggs; add oil and stir.

2Sift dry ingredients and add to oil mixture and beat well.

3Add pineapple (don't drain) and carrots and beat again.

4Pour into greased 9 x 13-inch pan.

5Bake at 325° about 45 to 50 minutes, until done.
