- 2 c. flour
- 2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1 1/2 tsp. salt
- 2 c. sugar
- 1 1/2 c. oil (canola)
- 4 eggs
- 1 Tbsp. vanilla
- 2 to 3 c. grated carrots
- 1 (8 oz.) can crushed pineapple, drained
- 1 1/2 c. chopped walnuts
- 1/2 c. white raisins
- 1/2 c. coconut
Directions

1Preheat oven to 350°.

2Combine the first 6 ingredients in a bowl.

3In a 2nd bowl, combine the next 3 ingredients.

4Mix both bowls together and add carrots and pineapple.

5Mix well; add the rest of the ingredients.

6Blend well; bake at 350° for 30 to 40 minutes.

7Makes 3 (8 or 9-inch) round or one 13 x 9-inch.
