Ingredients
- 2 medium carrots, grated
- 1 (20 oz.) can crushed pineapple (unsweetened)
- 2 (4.5 oz.) jars baby food sweet potatoes
- 1/2 c. chopped dates
- 1/2 c. walnuts
- 3 c. flour
- 2 tsp. soda
- 2 tsp. baking powder
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 3 egg whites
- 1 c. sugar
- 1 c. brown sugar
Directions

1Combine carrots, pineapple, sweet potatoes, egg whites and sugars.

2Mix well.

3Sift flour, soda, baking powder, salt, cinnamon and nutmeg.

4Coat dates and walnuts with a small amount of flour mixture.

5Combine flour mixture with carrot mixture.

6Mix well.

7Add dates and walnuts. Bake at 350° for 45 minutes in a greased and lightly floured Bundt pan.

8Store in refrigerator.
