  • 2 medium carrots, grated
  • 1 (20 oz.) can crushed pineapple (unsweetened)
  • 2 (4.5 oz.) jars baby food sweet potatoes
  • 1/2 c. chopped dates
  • 1/2 c. walnuts
  • 3 c. flour
  • 2 tsp. soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 egg whites
  • 1 c. sugar
  • 1 c. brown sugar

Directions

    Combine carrots, pineapple, sweet potatoes, egg whites and sugars.

    Mix well.

    Sift flour, soda, baking powder, salt, cinnamon and nutmeg.

    Coat dates and walnuts with a small amount of flour mixture.

    Combine flour mixture with carrot mixture.

    Mix well.

    Add dates and walnuts. Bake at 350° for 45 minutes in a greased and lightly floured Bundt pan.
