  • 4 eggs
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • 2 c. sugar
  • 3 c. grated carrots
  • 1 1/2 c. corn oil
  • 1/2 tsp. salt
  • 2 tsp. baking soda

Directions

    Mix all dry ingredients together. Add oil, eggs, and vanilla and blend well. Bake in 3 (9 inch) cake pans at 350° for 30 minutes or until done. Frost with cream cheese frosting.
