  • 2 c. flour (all-purpose or unbleached all-purpose)
  • 2 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 c. cooking oil (Crisco or Wesson)
  • 4 eggs
  • 3 c. grated carrots
  • 1 tsp. vanilla
  • 1 c. raisins
  • 1 c. chopped nuts
  • 1 (8 1/2 oz.) medium can crushed pineapple, drained
  • 2 handfuls shredded coconut

Directions

    Mix all ingredients.

    Grease and flour pan.

    Bake in 9 x 13-inch pan for 65 minutes at 350°.

    Remove cake from pan after 10 minutes.

    Cool and top with cream cheese frosting.
