- 2 c. flour (all-purpose or unbleached all-purpose)
- 2 c. sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 1 1/2 c. cooking oil (Crisco or Wesson)
- 4 eggs
- 3 c. grated carrots
- 1 tsp. vanilla
- 1 c. raisins
- 1 c. chopped nuts
- 1 (8 1/2 oz.) medium can crushed pineapple, drained
- 2 handfuls shredded coconut
Directions

1Mix all ingredients.

2Grease and flour pan.

3Bake in 9 x 13-inch pan for 65 minutes at 350°.

4Remove cake from pan after 10 minutes.

5Cool and top with cream cheese frosting.
