Ingredients

  • 3 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2 c. grated carrots
  • 1 1/2 c. cooking oil
  • 1 1/2 c. pecans, broken or chopped
  • 8 oz. unsweetened crushed pineapple (including juice)
  • 3 eggs, slightly beaten
  • 1/2 c. coconut
  • 2 tsp. vanilla

Directions

    Sift all dry ingredients together.

    Add remaining ingredients. Bake in greased and floured tube pan in 350° oven for 1 hour and 10 minutes or more until done (test with toothpick).

    Cool and remove from pan.
