  • 3 1/4 Tbsp. hot water
  • 4 egg yolks
  • 2 1/4 c. self-rising flour
  • 2 1/4 tsp. cinnamon
  • 1 1/4 tsp. nutmeg
  • 1 1/2 c. grated carrots
  • 1 c. nuts (pecans)

    ingredients well: oil, sugar, hot water and egg yolks.

    Add flour, cinnamon, nutmeg, carrots and nuts. Fold in 4 egg whites, stiffly beaten.

    Grease and flour cake mold. Pour in mold.

    Bake 1 hour at 375°.
