- 1 1/2 c. sugar
- 1 c. vegetable oil
- 3 eggs
- 2 c. all-purpose flour *
- 1 1/2 tsp. ground cinnamon
- 1 tsp. baking soda *
- 1 tsp. vanilla
- 1/2 tsp. salt *
- 1/4 tsp. ground nutmeg
- 3 c. shredded carrots (about 5 medium)
- 1 c. coarsely chopped walnuts
Directions

1Heat oven to 350°.

2Grease and flour rectangular pan (13 x 9 x 2-inch).

3Mix sugar, oil and eggs in large bowl until blended; beat 1 minute.

4Stir in remaining ingredients except carrots and nuts; beat 1 minute.

5Stir in carrots and nuts.

6Pour into pan. Bake 35 to 45 minutes or until toothpick inserted in center comes out clean.

7Cool.

8Frost with cream cheese frosting.
