- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. oil
- 2 eggs
- 1 c. finely shredded carrots
- 1/2 c. crushed pineapple
- 1 tsp. vanilla
Directions

1Preheat oven to 350°.

2Sift first 6 ingredients together, then add all the rest.

3Mix until moistened; beat 2 minutes at medium speed.

4Bake in greased and floured 9 x 9 x 2-inch pan about 35 minutes or until done.

5Cool 10 minutes.

6Remove from pan.

7Cool. Frost with Cream Cheese Frosting.
