  • 1 3/4 to 2 c. sugar
  • 1 1/4 to 1 1/2 c. cooking oil
  • 4 eggs
  • 2 to 2 1/4 c. flour
  • 1 to 2 tsp. soda
  • 1 to 2 tsp. cinnamon
  • 1/4 to 1 tsp. salt
  • 1 small can crushed pineapple (optional)
  • 1 1/2 to 3 c. grated carrots
  • 1/2 to 1 c. chopped nuts (optional)

Directions

    Cream sugar and oil; beat in eggs.

    Add dry ingredients; fold in pineapple, carrots and nuts.

    Pour into three 8-inch layer pans.

    Bake at 325° to 350° for 25 to 40 minutes or until done.
