- 1 3/4 to 2 c. sugar
- 1 1/4 to 1 1/2 c. cooking oil
- 4 eggs
- 2 to 2 1/4 c. flour
- 1 to 2 tsp. soda
- 1 to 2 tsp. cinnamon
- 1/4 to 1 tsp. salt
- 1 small can crushed pineapple (optional)
- 1 1/2 to 3 c. grated carrots
- 1/2 to 1 c. chopped nuts (optional)
Directions

1Cream sugar and oil; beat in eggs.

2Add dry ingredients; fold in pineapple, carrots and nuts.

3Pour into three 8-inch layer pans.

4Bake at 325° to 350° for 25 to 40 minutes or until done.
