  • 2 c. sugar
  • 4 eggs, well beaten
  • 2 c. flour
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 2 tsp. soda
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1 c. pecan pieces
  • 3 c. grated carrots
  • 1 c. crushed pineapple, drained

    Beat oil and sugar. Add eggs. Coat nuts in dry ingredients. Add to oil and sugar mixture. Slowly add carrots and pineapple. Bake 1 hour at 350°.
