Ingredients
- 2 cups carrots (shredded)
- 2 cups flour
- 1 1/4 cups sugar
- 1 1/4 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 teaspoon ground cloves
- 2 teaspoons vanilla
- 3 egg whites (or substitutes)
- 1/2 cup applesauce
- 1/3 cup boiling water
Directions

1Preheat oven to 350 degrees.Sift together all fry ingredients.

2Add eggs, vanilla and applesauce to dry and beat on low speed till mixed well.

3Add boiling water to carrots and beat on medium speed for 2 minutes.

4Pour into bread pan and bake for about 45 minutes Let cool overnight.

5Cut into 8 or 10 pieces and store in Tupperware in the fridge.

6*Best results when baked the day before.
