  • 2 c. all-purpose flour
  • 1 1/4 c. salad oil
  • 1 c. packed dark brown sugar
  • 3/4 c. sugar
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1/2 tsp. ground cloves
  • 1/2 (6 oz.) can frozen orange juice
  • 4 eggs
  • 2 c. shredded carrots
  • 1 c. chopped walnuts
  • 1/2 c. raisins
  • confectioners sugar

Directions

    Preheat oven to 350°.

    Grease and flour 10-inch Bundt pan. Into large bowl mix first 11 ingredients.

    Mix at low until just mixed.

    Increase to high for 4 minutes, scraping bowl.

    With rubber spatula fold in carrots, walnuts and raisins.

    Spoon into prepared pan.

    Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean.

    Cool on a wire rack 10 minutes. Remove from pan.

    Let cool completely.

    Sprinkle with confectioners sugar.
