- 2 c. all-purpose flour
- 1 1/4 c. salad oil
- 1 c. packed dark brown sugar
- 3/4 c. sugar
- 2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. salt
- 1 tsp. vanilla
- 1/2 tsp. ground cloves
- 1/2 (6 oz.) can frozen orange juice
- 4 eggs
- 2 c. shredded carrots
- 1 c. chopped walnuts
- 1/2 c. raisins
- confectioners sugar
Directions

1Preheat oven to 350°.

2Grease and flour 10-inch Bundt pan. Into large bowl mix first 11 ingredients.

3Mix at low until just mixed.

4Increase to high for 4 minutes, scraping bowl.

5With rubber spatula fold in carrots, walnuts and raisins.

6Spoon into prepared pan.

7Bake for 55 to 60 minutes, until toothpick inserted in center comes out clean.

8Cool on a wire rack 10 minutes. Remove from pan.

9Let cool completely.

10Sprinkle with confectioners sugar.
