- 2 lb. carrots, peeled and sliced
- 1 stick butter, melted
- 1/2 lb. Velveeta cheese, melted
- 1 tube Ritz crackers, crushed
Directions

1Slice carrots into rounds.

2Boil peeled and sliced in salted water until soft; drain.

3Mix cheese and butter with cooked carrots.

4Pour in a shallow baking dish.

5Top with crushed Ritz crackers.

6Bake at 300° for 30 to 45 minutes or until brown.
