- 6 c. sliced raw carrots
- 1 small chopped onion
- 3 Tbsp. margarine
- 1 can cream of celery soup
- 3 c. herb-flavored croutons
- 1/2 tsp. salt
- dash of pepper
- 1/2 c. cubed cheese (mild Colby or Velveeta)
Directions

1Cook carrots in salted water until tender; drain.

2Saute onion in butter and combine with carrots.

3Heat soup, 1/2 teaspoon salt, dash of pepper and 1/2 cup diced cheese, until melted.

4Pour over cooked carrots.

5Pour all into greased 8 x 8-inch pan and top with croutons tossed with margarine.

6Bake at 350° for approximately 30 minutes or until topping is browned.
