Carrot Casserole

Ingredients

  • 6 c. sliced raw carrots
  • 1 small chopped onion
  • 3 Tbsp. margarine
  • 1 can cream of celery soup
  • 3 c. herb-flavored croutons
  • 1/2 tsp. salt
  • dash of pepper
  • 1/2 c. cubed cheese (mild Colby or Velveeta)

Directions

    Cook carrots in salted water until tender; drain.

    Saute onion in butter and combine with carrots.

    Heat soup, 1/2 teaspoon salt, dash of pepper and 1/2 cup diced cheese, until melted.

    Pour over cooked carrots.

    Pour all into greased 8 x 8-inch pan and top with croutons tossed with margarine.

    Bake at 350° for approximately 30 minutes or until topping is browned.
