Ingredients

  • 2 c. fresh carrots
  • 1/4 c. minced onion
  • 1/2 c. water
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1/4 c. butter or oleo
  • 1/3 c. Cheddar cheese
  • 1/4 c. flour
  • 1/2 c. milk
  • 1 tsp. parsley or parsley flakes
  • 1/4 c. crushed corn flakes
  • 2 Tbsp. melted butter or oleo

Directions

    Simmer thinly

    sliced carrots until tender; drain.

    Melt butter; stir in flour, then add milk, stirring constantly until sauce is thickened.

    Remove from heat and add grated cheese and parsley.

    Add carrots.

    Place in a quart casserole or baking dish, greased.

    Mix melted butter and corn flakes and sprinkle over the top.

    If you are using glass, bake at 350°

    for 50 minutes. Otherwise, bake at 375°.
