Carrot Casserole

  • 6 c. sliced raw carrots
  • 1 medium onion, chopped
  • 4 Tbsp. butter
  • 1 can cream of celery soup
  • 3 c. herb flavored croutons
  • 1/2 tsp. salt
  • dash of pepper
  • 3/4 c. cubed Velveeta

Directions

    Cook carrots in salted water until tender.

    Drain.

    Saute onion in butter and combine with carrots.

    Heat soup, salt, pepper and cheese until melted.

    Pour over cooked carrots.

    Pour all in a greased 8 x 8-inch pan and top with croutons tossed with butter. Bake at 350° for approximately 30 minutes or until heated through and topping is browned.
