Carrot Casserole

  • 7 Tbsp. margarine
  • 1/2 c. chopped onion
  • 3/4 c. shredded Cheddar cheese
  • 1 can cream of celery soup
  • 4 c. cooked carrots or 1 (24 oz.) pkg. frozen, sliced carrots
  • 3 c. herbed chicken stuffing

Directions

    Melt 3 tablespoons butter in a large skillet.

    Add onions and saute until tender.

    Add cheese, soup and carrots; mix well.

    Pour mixture into a 2-quart casserole and top with stuffing.

    Melt remaining margarine and pour over stuffing.

    Bake at 350° for 20 minutes.
