- 2 lb. carrots, sliced
- 1 Tbsp. powdered sugar
- a little salt
- 3/4 stick butter
- 1/2 lb. Velveeta cheese
Directions

1Cook carrots with powdered sugar and salt until tender (do not overcook).

2Drain.

3Melt butter with cheese over very low heat. Stir to prevent sticking.

4Place carrots in flat baking dish and cover with cheese mixture.

5Sprinkle with Ritz cracker crumbs. Dot with more butter.

6Place in oven and bake until heated through.
