  • 4 c. carrots, shredded or sliced very thin and cooked until tender
  • 1/2 c. Cheddar cheese, grated
  • 1 medium onion, diced
  • 1 c. Ritz crackers, crushed
  • 3 Tbsp. butter or margarine, melted
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 3/4 c. tomato juice

Directions

    Mix all ingredients together except juice.

    Spoon into deep pie plate.

    Pour juice over top.

    Bake for 30 minutes at 375°.
