  • 1 lb. cooked and mashed carrots (about 2 c.)
  • 2 beaten eggs
  • 1 1/2 c. milk
  • 1 c. shredded strong cheese
  • 1 c. coarsely broken cracker crumbs
  • 2 Tbsp. butter or oleo
  • 1 tsp. salt

Directions

    Combine all ingredients and mix well.

    Put in a lightly greased 8 x 8 x 2-inch baking dish.

    Bake in a 350° oven for about 60 minutes or until a knife inserted comes out clean.
