- 1 c. sifted cake flour
- 9 eggs, separated
- 1 1/2 c. mashed, cooked carrots
- 1 Tbsp. grated orange peel
- 1 Tbsp. ginger
- 1 Tbsp. cinnamon
- 1 c. ground nuts
Directions

1Separate the eggs and add a pinch of salt to whites; set aside.

2Beat yolks and add sugar, cake flour, carrots, orange peel, ginger, cinnamon and nuts.

3Beat egg whites until stiff and fold into egg yolk mixture.

4Turn into a 9-inch tube pan and bake at 325° for 1 hour.
