  • 1 c. sugar
  • 1 c. sifted cake flour
  • 9 eggs, separated
  • 1 1/2 c. mashed, cooked carrots
  • 1 Tbsp. grated orange peel
  • 1 Tbsp. ginger
  • 1 Tbsp. cinnamon
  • 1 c. ground nuts

Directions

    Separate the eggs and add a pinch of salt to whites; set aside.

    Beat yolks and add sugar, cake flour, carrots, orange peel, ginger, cinnamon and nuts.

    Beat egg whites until stiff and fold into egg yolk mixture.

    Turn into a 9-inch tube pan and bake at 325° for 1 hour.
