- 1/2 c. boiling water
- 1/2 c. raisins
- 3/4 to 1 c. brown sugar
- 1/2 c. shortening
- 1 egg, unbeaten
- 1 tsp. lemon extract
- 1/2 c. finely shredded raw carrots
- 1 1/2 c. sifted all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
Directions

1Pour boiling water over raisins and soak 5 minutes; drain. Combine sugar, shortening, egg and lemon extract in mixing bowl; beat well.

2Stir in carrots and drained raisins.

3Sift together flour, baking powder and salt; add to first mixture and blend well. Drop by teaspoonfuls onto greased baking sheet.

4Bake at 375° for 10 to 12 minutes.

5Makes 3 dozen.
