Ingredients

  • 1 1/2 c. all-purpose flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 3/4 c. butter, melted
  • 2 eggs
  • 1 c. carrot pieces
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 can pineapple chunks, drained (reserve liquid for cream cheese frosting)

Directions

    Mix dry ingredients together in large bowl.

    Put all remaining ingredients into blender container.

    Cover and process 3 cycles at grind or until carrots are chopped coarsely. Stir carrot mixture into dry ingredients until just moistened.
