- 1 c. boiled mashed carrots
- 2 c. boiled rice
- 1/4 c. minced raw onions
- 1/2 c. white sauce
- 2 eggs, well beaten
- 1 c. bread crumbs (maybe more)
- salt and butter to taste
Directions

1Combine the carrots, onions, rice, one egg and white sauce. Season.

2Shape into cakes.

3Dip into crumbs, egg and crumbs again. Fry until delicately browned on both sides.
