- 1 1/3 lbs carrots, peeled and coarsely chopped
- 1 tbsp olive oil
- 1 clove garlic, crushed
- 1/2 tsp ground cumin
- 1/3 cup plain yogurt
- None None Grissini sticks, to serve (optional)
Directions

1Boil, steam or microwave the carrots until tender. Drain.

2Heat oil in a large skillet on medium heat. Cook the garlic and ground cumin, stirring, for 30 seconds or until fragrant. Stir in the carrot and lemon juice and cook, stirring, until combined.

3Remove from the heat; cool for 10 mins.

4Blend or process the carrot mixture and yogurt until just smooth. Season to taste. Serve the carrot dip with grissini sticks, if desired.
