- 3 large eggs
- 1 c. vegetable oil
- 1 1/3 c. sugar
- 2 c. shredded carrots
- 1/2 medium size lemon
- 3 c. flour
- 1 tsp. salt
- 1 tsp. soda
- 1/2 tsp. baking powder
Directions

1Grind peeling, pulp and all of lemon.

2Beat eggs; add oil and sugar.

3Mix well.

4Add carrots and lemon and blend.

5Mix dry ingredients and add to others, just to blend.

6Pour into 2 greased loaf pans.

7Bake at 350° for about 1 hour.
