Carrot Lemonade

Ingredients
- 1 lb baby carrots
- 3 1/2 cup water (divided)
- 3 cup pineapple juice (divided)
- 3/4 cup fresh squeezed lemon juice
- 1 ice
- 1 lemon wedges for garnish
Directions

1In a medium saucepan, combine carrots and water.

2Bring to a boil.

3Reduce heat and cover.

4Simmer 30 minutes or until very tender.

5Cool slightly.

6Transfer mixture to a blender.

7Add 1 cup of the pineapple juice.

8Cover and blend until smooth.

9Transfer to a pitcher.

10Stir in the remaining pineapple juice and the lemon juice.

11Cover and chill 2 to 24 hours.

12(Mixture may thicken upon standing, so stir in 1 to 2 cups water to desired consistency.)

13Serve over ice with lemon wedges.
