  • 1 lb. lean ground beef
  • 2 large carrots, shredded (1 c.)
  • 1 small onion, chopped (1/3 c.)
  • 1/2 c. bread crumbs
  • 1 egg
  • 1/4 c. milk
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. oil
  • 1 (10 1/4 oz.) can beef gravy

    Mix in bowl beets, carrots, onion, egg, milk, salt and pepper. Shape in 1 1/2-inch meatballs. Heat oil in large skillet and brown meatballs. Add gravy. Cover and simmer 15 minutes or until meatballs are done. If desired, serve over noodles or rice. Yields 4 servings.
