Ingredients
- 4 c. all-purpose flour
- 1 tsp. nutmeg
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1 tsp. baking powder
- 2 tsp. baking soda
- 1 tsp. salt
- 3 c. sugar
- 1 c. oil
- 2 c. shredded carrots
- 4 eggs, beaten
- 1 1/4 c. water
- 1 c. chopped dates (you can buy these already chopped in a box)
- 1 c. pecans, chopped
Directions

1Mix all dry ingredients in a separate bowl.

2In a large bowl, put oil, carrots, eggs, water and dates.

3Add dry ingredients and mix well.

4Add nuts last.

5Grease 2 loaf pans and bake for 1 hour in a 325° oven.

6This bread is very moist and freezes well.
