- 3 cans or jars strained carrots
- 2 eggs
- 2/3 c. granulated sugar
- 1/2 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1 c. whole milk
- 1/2 tsp. salt
Directions

1Line a 9-inch pie pan with your favorite pie crust.

2Separate the eggs.

3Combine carrots, well beaten egg yolks, sugar, nutmeg, cinnamon and milk.

4Add salt to the egg whites and whip until stiff.

5Fold the egg whites into the carrot mixture.

6Fill the pie crust.

7Bake in a hot oven (450°) for 15 minutes, then lower temperature to moderate (325°) for 30 minutes.
