Ingredients

  • 2 1/2 c. sliced carrots (about 1 lb.), cooked and drained
  • 1/2 c. sugar
  • 1 tsp. salt
  • 1/2 tsp. ginger
  • 1 3/4 c. milk
  • 1 unbaked 9-inch pie shell
  • 1 egg
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg

Directions

    Beat together cooked carrots, egg, salt, cinnamon, ginger, nutmeg and milk smooth, using mixer, food processor or blender. Pour into pie shell and bake in preheated 450° oven for 10 minutes.

    Reduce heat to 300° and bake an additional 50 minutes or until filling is firm.

    Cool on rack. Garnish with whipped topping, if desired.
