- 2 1/2 c. sliced carrots (about 1 lb.), cooked and drained
- 1/2 c. sugar
- 1 tsp. salt
- 1/2 tsp. ginger
- 1 3/4 c. milk
- 1 unbaked 9-inch pie shell
- 1 egg
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
Directions

1Beat together cooked carrots, egg, salt, cinnamon, ginger, nutmeg and milk smooth, using mixer, food processor or blender. Pour into pie shell and bake in preheated 450° oven for 10 minutes.

2Reduce heat to 300° and bake an additional 50 minutes or until filling is firm.

3Cool on rack. Garnish with whipped topping, if desired.
