  • 2 c. sugar
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 4 eggs, beaten
  • 1 1/3 c. vegetable oil
  • 1 tsp. vanilla
  • 2 c. shredded carrots
  • 1 c. crushed pineapple, undrained

Directions

    Combine all the ingredients. Beat at medium speed for 2 minutes.

    Pour into two greased 9 x 5-inch loaf pans. Bake in a 350° oven for 50 to 55 minutes.
