Carrot Pineapple Bread

  • 3 c. sifted flour (plain)
  • 1 tsp. salt
  • 3 eggs, beaten
  • 2 tsp. vanilla
  • 1 c. grated carrots (fine)
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 2 c. sugar
  • 1 c. cooking oil
  • 1 c. pineapple (small can crushed), undrained (will need juice)

Directions

    Mix together the flour, soda, salt and sugar. Stir in oil, eggs, carrots and pineapple.

    Mix thoroughly.

    Add vanilla.

    Bake in a 325° oven for 40 minutes.

    Makes 6 small pans, or 2 regular pans, bake 1 hour.
