Carrot Pineapple Cake

- 2 c. sugar
- 1 1/2 c. cooking oil
- 4 eggs
- 2 c. flour
- 1 1/2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. baking powder
- 2 c. finely grated carrots
- 3/4 c. chopped nuts
- 1 c. coconut
- 1 (8 1/4 oz.) can crushed pineapple (undrained)
Directions

1Heat oven to 325°.

2Grease and lightly dust with flour two 9-inch square pans or three 8-inch round pans.

3Sift together flour, salt, baking powder, soda and cinnamon.

4Combine oil, sugar and eggs; beat thoroughly.

5Add flour mixture and beat.

6Fold in carrots, nuts and pineapple.

7Pour batter into pans.

8Bake until cake begins to pull away from sides of pan, about 1 hour.

9Cool 15 minutes and remove from pans.

10Frost with frosting following.
