- 1 c. oleo
- 1/2 tsp. baking soda
- 1/2 c. brown sugar
- 1/2 tsp. salt
- 1 egg, slightly beaten with 1 tsp. baking powder
- 1 Tbsp. water
- 1/2 tsp. cinnamon
- 2 c. grated carrots
- 1/8 tsp. nutmeg
- 1 1/2 c. flour
Directions

1Cream oleo with sugar.

2Add egg and water, then the carrots. Sift together the dry ingredients and add to cream mixture.

3Mix thoroughly.

4Spoon into greased 6 to 8-cup ring mold.

5Bake in 350° oven for about 40 minutes.

6This is a good dish to serve with meats.
