  • 6 large carrots, peeled and chopped
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1/2 cup Greek yogurt
  • 1/4 cup milk

Directions

    Bring 2 inches of water to a boil in a large pot.

    Place chopped carrots in steamer basker. Carefully lower steamer basket into boiling water, and cover pot. Steam carrots until tender (8 - 10 minutes).

    Combine steamed carrots and remaining ingredients in blender. Blend until smooth. Use CAUTION anytime you blend hot substances.
