- 1 cup butter or 1 cup margarine, softened
- 1 cup packed brown sugar
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon finely shredded orange peel
- 12 teaspoon ground ginger
- 12 teaspoon ground nutmeg
- 2 eggs
- 1 teaspoon vanilla
- 1 12 cups all-purpose flour
- 1 12 cups finely shredded carrots
- 1 cup rolled oats
- 1 cup raisins
- 12 cup chopped walnuts or 12 cup pecans
Directions

1In a mixing bowl, beat the butter or margarine with an electric mixer on medium to high speed for 30 seconds.

2Add the brown sugar, baking soda, cinnamon, orange peel, ginger, and nutmeg; beat till combined.

3Beat in the eggs and vanilla.

4Beat in as much of the flour as you can with the mixer.

5Stir in any remaining flour with a wooden spoon.
