- 1 (16 oz.) can carrots, drained
- 1/2 c. all purpose flour
- 1/2 c. plus 2 Tbsp. melted margarine
- 1 c. sugar
- 1 tsp. baking powder
- 1/4 tsp. salt
- 3 eggs
- 1 tsp. vanilla
Directions

1Using food processor, blend carrots with margarine. Combine flour, sugar, baking powder, salt, eggs and vanilla. Add carrots and mix well. Spread mixture in buttered 8 x 8 x 2 inch baking dish. Bake uncovered at 350° for about 45 minutes.
