Ingredients

  • 1 lb. carrots, peeled and cubed
  • 1 lb. potatoes, peeled and cubed
  • 1/2 c. onion
  • 2 Tbsp. butter
  • 6 c. chicken broth
  • 1/2 tsp. thyme
  • 1 bay leaf
  • 1 c. heavy cream
  • 1 c. milk
  • 1/8 tsp. Tabasco
  • 1/2 tsp. Worcestershire
  • 1/2 tsp. sugar

Directions

    Saute onion in butter in large pot.

    Add carrots, potatoes and broth and boil.

    Add spices and simmer 1/2 hour, covered.

    Mash, then puree in blender.

    Return to pot and add milk, cream and seasonings; mix.

    Simmer about 1/2 hour and serve.
