- 1 tablespoon butter
- 1 large onion, chopped
- 4 -5 medium carrots, sliced thin
- 3 12 cups low sodium chicken broth
- 14 cup uncooked white rice
Directions

1Saute onions & carrots in butter,untill onions are translusent.

2Add broth.

3Bring to a boil.

4Add rice & stir.

5Reduce heat to a low simmer& cover.

6Cook 30 minutes or until carrots are soft.

7Cool slightly.

8Puree entire mixture.

9Return to pot & simmer till warm.

10Serve with fresh ground black pepper & oyster crackers.

11If desired add a little milk,sour cream or plain yogurt.
