- 4 tablespoons butter
- 2 medium onions, sliced
- 1 sprig thyme
- 2 1/2 pounds carrots, peeled and sliced (about 6 cups)
- Salt
- 6 cups chicken broth
Directions

1In a heavy-bottomed pot, melt the butter.

2When it starts to foam, add the onions and thyme and cook over medium-low heat until tender, about 10 minutes.

3Add the carrots, season with salt and cook for 5 minutes.

4Pour in the broth, bring to a boil and then simmer until the carrots are tender, about 30 minutes.

5Season to taste with salt.

6For a smooth soup, use a blender and puree until smooth.
