- 1 pinch salt
- 4 lbs chopped carrots
- 2 cups chicken or 2 cups vegetable broth
- 2 cups water
- 14 cup defatted peanut flour
- 1 tablespoon chopped garlic
- 2 tablespoons oil
Directions

1Wash, peel, coarsly chop carrots.

2Coarsly chop onion.

3Saute onion in oil.

4When onion is translucent, add carrots, broth, and garlic.

5Bring to a boil.

6Turn heat to simmer, and cook until carrots are soft enough to puree.

7Add peanut butter, then either transfer soup to blender or use stick blender to puree everything together.

8Season with Siracha, salt and pepper, mint, basil, maple syrup, or other seasonings to taste.
