Carrot Soup

Ingredients

  • 1 pinch salt
  • 4 lbs chopped carrots
  • 2 cups chicken or 2 cups vegetable broth
  • 2 cups water
  • 14 cup defatted peanut flour
  • 1 tablespoon chopped garlic
  • 2 tablespoons oil

Directions

    Wash, peel, coarsly chop carrots.

    Coarsly chop onion.

    Saute onion in oil.

    When onion is translucent, add carrots, broth, and garlic.

    Bring to a boil.

    Turn heat to simmer, and cook until carrots are soft enough to puree.

    Add peanut butter, then either transfer soup to blender or use stick blender to puree everything together.

    Season with Siracha, salt and pepper, mint, basil, maple syrup, or other seasonings to taste.
