  • 1 small onion, chopped
  • 1 tablespoon butter or 1 tablespoon margarine
  • 1 lb carrot
  • 2 cups chicken broth
  • 1 tablespoon fresh dill or 1 teaspoon dried dill
  • salt
  • 1 cup half-and-half

Directions

    In 3L saucepan, cook onion in butter 5 minutes or until onion is tender.

    Add carrots,broth and dill; cook over medium heat 15-28 minutes or until carrots are very tender.

    Put carrots, broth, dill and salt into blender container.

    Cover and process until smooth.

    Return mixture to saucepan; stir in half and half.

    Gently heat; do not let soup boil.
