Ingredients
- 2 lb carrots
- 1 large onion
- 4 cup chicken broth
- 1 1/2 tbsp curry powder
- 1 salt
- 1 pepper
- 2 tbsp vegetable oil
Directions

1Pour oil in a large soup pot.

2Heat oil.

3Chop onion and add to oil.

4Cook onions until they are translucent.

5Peel and chop carrots.

6Add to onions.

7Add curry powder and broth to pot.

8Cover pot and cook for 30 minutes, just until carrots are tender.

9Put carrots in a food processor with 1/2 cup of broth and puree.

10Add more broth if needed.

11Pour carrot puree back into soup pot.

12Stir well and add more water if you would like a more water down consistency.

13Add salt and pepper to your liking.

14Serve with cheese bread or crackers.
