Carrot Waldorf Salad

  • 2 c. shredded carrot
  • 1 1/2 c. chopped Red Delicious apples
  • 1 c. thick sliced celery
  • 1/4 c. pitted chopped dates
  • 1/4 c. plain nonfat yogurt
  • 1/4 c. nonfat mayonnaise
  • 2 Tbsp. orange juice
  • 1 tsp. grated lemon rind

Directions

    Combine first 4 ingredients in medium bowl.

    Combine yogurt, mayo, orange juice and lemon rind.

    Stir well; pour over carrot mixture.

    Toss gently.

    Cover and chill at least 1 hour.
